Ficotto
A niche product that has been rediscovered in the enogastronomic history of the Basilicata region. ficotto® is a cooked fig must made from the
autochthonous pink Pisticci fig ("Fico Rosa di Pisticci**"). A fruity-sweet alternative to old balsamic vinegar.
Uses: ideal with cheese, cooked and roasted meat, suitable for fruit ice cream or as a sauce for dessert, also excellent for preparing sauces and Salad dressing.
Extraction: ficotto® is obtained by crushing and pressing the figs, which are then slowly boiled with water until a concentrated thick "syrup" is
obtained. Figs of this autochthonous variety are used in particular and exclusively from crops grown in Metaponto**, called "Fico Rosa di Pisticci".
Ingredients: fresh fig juice, water (no added sugar, preservatives, flavourings, colourings and thickeners).
**Pisticci is a village of the district of Metaponto which belongs to the province of MATERA.

Properties:
Color: shiny brown
Taste: sweet
Consistency: moderately dense
Smell and taste: it is associated with caramel, figs and honey.
Storage conditions: Store in a cool and dry place away from sources of heat and direct light. After opening, it should be consumed within one month. It is not necessary to keep it in the fridge.
Packaging: the product is supplied in dark glass bottles, with a one-piece synthetic mushroom closure or with an aluminum closure.
